I must apologize for my recent hiatus from posting recipes – I didn’t realize how difficult it would be to try to bake with two small children around. It’s nearly impossible to concentrate on a recipe with a baby crying and a toddler demanding your attention. That being said, I thought I would start small and try making some easy, no bake recipes that are quick to throw together and require little concentration. Hopefully, in the near future I’ll be able to return to my favourite and more labour-intensive baking of donuts and cakes!

For now though, as I am still trying very hard to eat healthy and get back my pre-baby bod, so I decided to share with you my favorite vegan peanut butter cup recipe. These delightful little morsels are sweet, satisfying and actually good for you (believe it or not)! I’ve adapted my recipe from Purella’s 3 Clean Ingredients Peanut Butter Cups. These are beyond easy to throw together, are no-bake, and ready for you to enjoy in 30 minutes or less. You’ve got to try them!!

VEGAN PEANUT BUTTER CUPS
Ingredients
  • 1 1/2 cups vegan chocolate chips
  • 3/4 cup organic peanut butter
  • 4 tbsp organic coconut oil (divided)
  • 12 cupcake liners
Instructions
  1. Place 12 cupcake lines on a baking sheet and set aside.
  2. Bring to boil a shallow amount of water in a small pot, over medium heat.
  3. Place a small bowl on top of the pot (without touching the water).
  4. Add the chocolate chips, plus 2 tbsp of coconut oil and stir to melt.
  5. Remove from the heat once melted completely.
  6. In a small bowl, mix the peanut butter with 2 tbsp of melted coconut oil until fully incorporated.
  7. Set aside.
  8. With a small spoon, scoop into each cupcake liner just enough melted chocolate to cover the bottom of the liner.
  9. Place the baking pan in the freezer for two minutes while the chocolate solidifies.
  10. After two minutes, remove the pan from the freezer and scoop a small amount of the peanut butter mixture on top of the cold chocolate.
  11. Use the back of a spoon to smooth out the surface.
  12. Place the baking pan back into the freezer for 5 minutes or until the peanut butter has solidified.
  13. Remove the pan from the freezer and top off each cup with another scoop of the chocolate mixture and smooth out the top with the back of a spoon.
  14. Return to the freezer for 15 minutes or until they are completely solid.
  15. Remove the pan from the freezer and gently peel off the liners from the peanut butter cups.
  16. Enjoy!!
